Soup season is here! Cozy up to a warm bowl of Loaded Vegan Potato Soup made with caramelized onions, a thick seasoned roux, cubed potatoes, and Dairy-Free cheese. Perfect as an appetizer, it’s topped with fresh herbs, vegan bacon bits, and pairs perfectly with toasted bread for a full feast of flavor. Dig in and enjoy!

About the Ingredients:

The star of this recipe is, of course, the potatoes. While any potato can work, I recommend Russet potatoes because they are high in starch and low in moisture which makes them ideal for thick and creamy soups. Vegetable broth adds more flavor to your soup, but you can also just use water. Finally, the secret to the creaminess of our soup: coconut cream! It is thicker and has a higher fat content, which makes your soup extra scoop-able!

Vegetable Broth

Vegetable broth will make your soup heartier and enhance its flavors. It can be made from water and concentrated juices of carrots, celery, onion, cabbage, etc.

Nutritional Yeast

Nutritional Yeast acts as flavoring and thickener to your soup. In addition to it being a great source of vitamins and minerals, its cheesy and nutty flavor adds to the savory taste of your soup!

Nutritional Yeast is an excellent source of

  • Thiamine (B1)
  • Riboflavin (B2)
  • Pyridoxine (B6)
  • Potassium.
  • Zinc.

Chili Powder

Chili powder is the go-to addition when you want to spice up your food. Although my recipe asks you to add 1tsp of chili powder, you can always add as much or as little as your heart dictates!

Coconut Cream

For a richer, more flavorful soup, don’t forget to add coconut cream! However, if you don’t have it available, you can also swap it for cashew cream or any other plant-based milk.

Vegan Cheddar Shreds

Adding vegan cheddar shreds is a great way to give your soup a robust burst of flavor and that rich, creamy texture!

My favorite brand for cheddar shreds is Follow Your Heart, but you can use whatever brand that is available to you.

Cubed Potatoes

Slice whole potatoes into cubes and put them in an airtight container filled with cold water. Temporarily store them in the refrigerator to prevent them from getting soggy before you add them to your soup. You can also use any potato you like!

You can make this loaded potato soup recipe in a large pot with a lid or an instant-pot.

Are the extra toppings necessary?

Adding more toppings to your soup can emphasize its flavors and provide a bit more savory crunch. However, the original recipe itself tastes just as good without the extras.

What else can I serve with this soup?

Although this soup is already heartwarmingly good enough on its own, the possibilities with this soup is endless. You can pair it with sandwiches, garlic bread, different sorts of salads, baked potatoes, quesadillas, bruschetta, grilled cheese and peppers, and any other dish you want! How long does this recipe last?

When stored in a sealed container, it can last up to 7 days in the fridge, and a month in the freezer. However, the soup can get thicker as it gets cooler in the fridge. An easy fix to this is adding a little water or vegetable broth to your soup while reheating it! You can reheat it over medium heat on a stovetop or by putting it in the microwave for a few minutes.

Will non-vegans like this?

Of course! Everybody loves a good soup in this chilly weather! Aside from this recipe being easy to cook, the richness and creamy flavor of this soup will make anyone want to immerse themselves in its comfortable warmth. Ingredients

  • LOADED POTATO SOUP:

  • Vegan Butter or Oil (¼ Cup)

  • Diced White Onion (1 Cup)

  • Minced Garlic (3 Tbs)

  • Gluten-Free Flour (3 Tbs)

  • Coconut Cream (1 Can)

  • Nutritional Yeast (3 Tbs)

  • Chili Powder (1 Tsp)

  • Smoked Paprika (½ Tsp)

  • Poultry Seasoning (3 Tbs)

  • Garlic Powder (1 Tbs)

  • Onion Powder (1 Tbs)

  • Salt and Pepper to Taste

  • Vegetable Broth (1-2 Cups)

  • Cubed Potatoes (1-3 Cups)

  • Follow Your Heart Mozzarella Shreds (1 Cup)

  • Follow Your Heart Cream Cheese (1 Cup)

  • Follow Your Heart Cheddar Shreds (¼ Cup)

  • Vegan Bacon Bits or Chopped Vegan Jerky (¼ Cup)

  • Chopped Green Onion (¼ Cup)

Instructions

In a large pot on medium high heat, melt down vegan butter and sauté the diced white onions until translucent and clear. Halfway through sautéing down the white onions, add in minced garlic and sauté along with the white onions.

Once the vegan butter, onions, and garlic are melted together and golden brown then add in the gluten-free flour to create a thick roux. Continuously mix everything together so that none of the flour burns on the bottom of the pot.

Slowly mix in the coconut cream, vegetable broth, and all of your seasoning and spice. Mix everything together well until it is all combined and fully incorporated.

Once the liquid mixture is bubbling and hot, then add in your diced potatoes and let them boil in the liquid for 10-15 minutes or until you can easily pierce them with a fork.

Once the potatoes are cooked all the way through, add in follow your heart mozzarella shreds and cream cheese. Mix everything together until the cheese is fully melted and incorporated into the soup.

Next, smash or blend half of the soup to make it creamy. Make sure to leave some of the cubed potatoes whole so that you have a nice chunky texture throughout the soup.

When you are ready to serve this soup, pour your desired amount into a bowl, top with follow your heart cheddar shreds, vegan bacon bits, and finish with chopped green onion.
