  • Plate of Hot Water (2 Cups)

  • Brown Rice Paper (4 Sheets)

  • Oil (¼ Cup)

  • Maple Syrup (2 Tbs)

  • Cayenne Pepper (½ Tsp)

  • Liquid Smoke (1 Tsp)

  • Pork BBQ Rub Seasoning (2 Tbs)

  • Rice Vinegar (2 Tbs)

  • Liquid Aminos (2 Tbs)

  • Everything Bagel Seasoning (4 Tbs)

  • Black Salt (1 Tbs)

  • Large Tomatoes (1 Tomato)

  • Fresh Lettuce (2 Cups)

  • Vegan Mayo or Hummus (½ Cup)

  • Little Northern Bakehouse Wide Bread (4-8 Slices)

Instructions

Turn your oven to 425°F in preparation to bake the rice bacon.

Make Bacon Rub by mixing together oil, maple syrup, cayenne pepper, liquid smoke, rub seasoning, rice vinegar, and liquid aminos. Mix together until well combined.

Stack two rice paper sheets together and cut them into thin 1-2 inch strips. Keeping the two pieces together, set the cut rice paper to the side.

Carefully keeping the two pieces together, dip the strips of rice paper into the plate of hot water to make them soft. Once they are wet, lay them out on a cutting board while you work on the other strips.

Once all the strips are wet, using a food brush paint on the bacon, paint both sides of the wet rice strips. Carefully flip them to make sure all sides are seasoned. Place the seasoned rice paper strips on a covered baking dish.

Bake the bacon for 5-8 minutes or until the rice paper is bubbling. Make sure to watch the oven so it doesn’t burn!

Take the rice bacon out of the oven to cool on the baking dish. It will garden and get crispy like bacon.

Next, toast the slices of bread until lightly browned. Slice the tomatoes and lettuce while the bread is toasting.

Add a thin layer of vegan mayonnaise to the toasted bread and a sprinkle of everything bagel seasoning.

Build the sandwich with slices of tomatoes, then the rice bacon, lettuce, more tomatoes and close the sandwich with the other slice of bread.

Carefully chop the sandwich into 4 pieces. Stack extra pieces of bacon and lettuce on the Kabobs first and then pierce the sandwich to stack it onto the Kabobs. Stack all 4 pieces of the sandwich on each wooden skewer.

Serve on a large platter and garnish with a sprinkle of everything bagel seasoning.
