  • Raw Walnuts (1.5 Cup)

  • Raw Sunflower Seeds (1 Cup)

  • Fody Steak Seasoning (2.5 Tbs)

  • Smoked Paprika (1 Tbs)

  • Olive Oil (2 Tbs)

  • Sun Dried Tomatoes (⅓ Cup)

  • Vegan Cheddar Cheese (½ Cup)

  • Chopped Lettuce (1 Cup)

  • Diced Tomatoes (1 Cup)

  • Minced Parsley (¼ Cup)

  • Plain Hummus (½ Cup)

  • Minced Pickles or Pickled Jalapeños (¼ Cup)

  • Yellow Mustard (3 Tbs)

  • Fody Unsweetened Ketchup (3 Tbs)

  • Maple Syrup (2 Tbs)

Instructions

Set the oven to 400F in preparation to bake the potatoes.

Wash and puncture the potatoes all over with a fork. Coat and rub the potatoes in oil and a splash of salt.

Baked the potatoes, turning them halfway through for 50-90 minutes while you prepare the other ingredients.

In a food processor, combine walnuts and sunflower seeds with steak seasoning, smoked paprika, oil, maple syrup, and unsweetened ketchup. Pulse and process together until all the ingredients are broken apart and it has the same texture as ground meat. Add in sun-dried tomatoes, and process again until everything is combined.

Cook the walnut meat in a hot pan and mix in vegan cheese until it is melted.

Create the burger sauce with hummus, unsweetened ketchup, mustard, minced pickles, and maple syrup.

Chop up tomatoes, lettuce, and fresh parsley for garnish.

When ready to assemble, open up the baked potatoes by slicing it longways to make what looks like a hotdog bun. Stuff the potatoes with the cheesy walnut meat and then sprinkle more cheese on top. Drizzle a good amount of burger sauce on top of the cheese and bake the potatoes for another 8-15 minutes until the cheese is fully melted.
