This Rainbow Sushi Roll is completely vegan and filled with vibrant, colorful fillings! Although traditional sushi is usually filled with seafood, since my recipe is fully vegan, my Rainbow Sushi Roll is instead filled with healthy vegetables like carrots, mangoes, avocado, bell peppers and cabbage. Paired with a spicy vegan mayo dip, this combination is a certain must-try!

If you’re new to homemade sushi, this vegetarian version is a much easier start for you since you don’t have to deal with raw fish. Just don’t forget to wet your hands first before dealing with rice so you can avoid that annoying stickiness!

About the Ingredients:

Although sushi is often served on elaborate plates in mid to high end restaurants, making this Rainbow Sushi Roll at home won’t actually be that expensive! Since you don’t have to buy raw fish or salmon (which are some of the more expensive ingredients), you can definitely save a lot of money on this recipe. You just need some fresh vegetables for your filling, that crispy crunchy nori wrap, rice, and spices for your spicy mayo dip!

Rice

There are different kinds of rice that is used to make sushi. Usually, you can just buy “Sushi Rice” in grocery stores, but it’s really just short grain rice. You can also try this with quinoa or cauliflower rice. You can pour beet juice on it to give it that vibrant, reddish pink color!

Rice contains high amounts of carbohydrates which fuels our body and provides us with energy! It is also an important food to our body – in moderation and if you are avoiding white rice you can use cauliflower rice as well. It’s just as tasty!

Nori Sheets

Frequently used in Japanese cuisine, Nori is a type of dried edible seaweed that is often used to wrap sushi rolls. You can buy this in local supermarkets.

Nori sheets are extremely rich in nutrients. Did you know that it contains up to 10 times more calcium than milk? Here are just some of the many nutrients you can get from Nori sheets:

  •  Vitamins A, B, C, D, E and K
  • Niacin
  • Folic acid
  • Taurine
  • Iodine
  • Tyrosine

Beet Juice

Not only is beet juice an incredibly tasty drink, but its health benefits are unbelievable. From boosting energy levels, controlling blood pressure and detoxifying the liver you can also use beet juice as natural food coloring for rice, cauliflower, or potatoes.

Beets are a healthy superfood! Not only do they add vibrant colors to any dish, they also contain many essential vitamins and minerals. For example, beets are particularly rich in folate, a vitamin that plays an important role in both growth and development as well as heart health. They’re also high in manganese which is involved in bone formation and nutrient metabolism. Plus, beet juice is loaded with copper – an integral mineral for energy production.

What equipment can I make this recipe in?

Although you can roll sushi without using a sushi mat, it can take a few trial and errors. If you don’t want to waste time and prefer a tighter sushi roll, you can order one on Amazon for just $4, which is not so expensive considering how much hassle it can save you! it may take some practice but you can also use your hands to tightly wrap the sushi like a thin burrito. Just make sure your hands are cold!

Are the extra toppings necessary?

The good thing about sushi is that you can choose whatever kind of fillings you like. If the ingredients I used here are not to your liking, you can swap my fillings with other vegetables like tempeh, cucumber, jalapeno, pickled onions, and sesame seeds. I sometimes like to add on a sprinkle of everything bagel seasoning or toasted sesame seeds. The possibilities are endless!

Ingredients

  • PINK SUSHI RICE:

  • Sushi Rice (2 Cups)

  • Water (3 Cups)

  • Rice Vinegar (½ Cup)

  • Organic Sugar or Maple Syrup (4 Tbs)

  • Fresh Beet Juice (½ Cup)

  • SUSHI FILLINGS:

  • Nori Sheets (1-4 Sheets)

  • Sliced Avocado (1 Avocado)

  • Sliced Bell Peppers (1 Pepper)

  • Sliced Rainbow Carrots (1-2 Carrots)

  • Sliced Mango or Pineapple (1 Cup)

  • Sliced Purple Cabbage (1 Cup)

  • SPICY DIPPING SAUCE:

  • Follow Your Heart Mayonnaise (1 Cup)

  • Red Chili Pepper Flakes (2 Tbs)

  • Rice Vinegar (¼ Cup)

  • Fresh Ginger (2 Tbs)

  • Fresh Garlic (3 Tbs)

  • Sesame Oil (¼ Cup)

  • Liquid Aminos (3 Tbs)

  • Tahini or Peanut Butter

Instructions

In a large pot, cook the short grain sushi rice with water and add in rice vinegar with organic sugar. Mix everything together, cover the pot and let this cook for 18-25 minutes or until the rice is soft and fully cooked.

Let the rice cool for at least one hour and then add in the fresh beat juice. Mix everything together until all of the rice is a bright pink color. Set aside.

Thinly chop up the vegetables and fruit in preparation for them to be rolled into the sushi.

Lay down a Nori sheet onto a flat surface and delicately spread the pink sushi rice across the top-facing side of the nori sheet from corner to corner, making sure every bit is covered.

Starting at the edge close to yourself lay down the vegetables horizontally and stack them tightly, close together. Add in the avocado and mango last and then delicately tuck the top of the nori sheet in towards the bottom, folding the thinly sliced vegetables snuggled in the middle. Continue to roll the nori tightly, pushing the sushi roll away from you, until the two edges of the nori sheet touch, creating a long cylinder. Place this in the fridge to chill.

Make the Spicy Dipping Sauce by blending together: follow your heart mayonnaise, red chili pepper flakes, rice vinegar, liquid aminos, fresh, ginger, fresh, minced garlic sesame, oil, peanut butter, and maple syrup. Blend together until smooth and add more hot water if needed to make it creamy.

Using a sharp knife, slice into the chilled sushi roll in a sawing motion to create ½ inch thick slices of sushi. Serve the sliced Rainbow Sushi with a side of Spicy Dipping Sauce and Liquid Aminos.
