You can choose your favorite mushrooms for this recipe! Cremini mushrooms have a meaty texture and earthy taste, while portobelos are robust and flavorful. White button mushrooms are mild but still add the right tinge of flavor. And my personal favorite Oyster mushrooms, which has a meaty texture and ability to absorb flavors. Due to this, they make the perfect meat replacement!

Whichever you choose, they’re all packed with vitamins and minerals to make your meal nutritious and delicious!

Nutritional Yeast

Nutritional yeast = Seasoning that adds a cheesy and nutty flavor with no dairy. Use in sauces, salads, and this recipe!

It’s a type of deactivated yeast that is rich in protein, fiber, vitamins, and minerals, making it a great addition to a plant-based meal.

Crushed Tomatoes or Marinara Sauce

Tomatoes or marinara sauce? Your choice! Crushed tomatoes are a blank slate, while marinara has extra saucy seasoning. Want a stronger tomato taste? Go for crushed tomatoes. Prefer more herbs? My Marinara’s got you covered. Either way, both are tasty options for a quick, delicious meal!

  • Chopped Mushrooms of Choice (3 Cups)

  • Oil or Vegetable Broth

  • Diced White Onion (½ Onion)

  • Minced Fresh Garlic (4 Tbs)

  • Poultry Seasoning (3 Tbs)

  • Italian Seasoning (2 Tbs)

  • Nutritional Yeast (4 Tbs)

  • Red Pepper Flakes (¼ Tsp)

  • Smoked Paprika (½ Tbs)

  • Maple Syrup (3 Tbs)

  • Crushed Tomatoes or Marinara Sauce (3 Cups)

  • Fresh Rosemary (2-3 Sprigs)

  • Zucchini Noodles (3-5 Cups)

  • Vegan Parmesan (1 Cup)

  • Vegan Mozzarella (1-2 Cups)

  • Vegan Feta (1 Cup)

  • Chopped Fresh Basil or Parsley (¼ Cup)

Instructions

Heat your oven to 430F in preparation to bake the dish.

Chop the mushrooms into small bite-sized pieces.

In a large pot, use oil to sauté diced white onions and minced garlic until translucent and slightly browned.

Next, add the chopped mushrooms to the pot and season everything with Poultry Seasoning, Italian Seasoning, Nutritional Yeast, Red Pepper Flakes, and Smoked Paprika. Mix everything together well.

Add crushed tomatoes to the pot and mix in fresh Rosemary sprigs and maple syrup as well.

Cover the pot and let the sauce cook on medium heat for 5-10 minutes.

While the sauce is cooking make your zucchini noodles by using a spiralizer.

In a large baking dish, add zucchini noodles and cover with the marinara sauce from edge to edge.

Top the marinara sauce with vegan Parmesan, mozzarella, and feta cheese. Top the cheese with a small sprinkle of fresh parsley.

Spray a bit of water on top of the cheese and bake the dish at 430F for 5-8 minutes. Once the cheese starts to melt, spray with a little bit more water and delicately flatten the top of the cheese with a spatula. Continue to bake for 5-10 more minutes.

Once the cheese is fully melted, garnish the top with freshly chopped Basil.
