  • CRUST:

  • Slices of Bread for Breadcrumbs (8 Slices Made)

  • Cinnamon and Nutmeg (1 Tsp)

  • Vegan buttery spread, melted (9 Tbs)

  • organic cane sugar (3 Tbs)

  • FUDGE FILLING:

  • Sweetened Condensed Coconut Milk (2 Cups)

  • Vegan Chocolate Chips (1.25 Cups)

  • Vanilla Extract (1 Tsp)

  • Crushed Fresh Raspberry (⅓ Cup)

  • Gluten-Free Pretzels (1.5 Cups)

  • TOPPINGS:

  • Melted Vegan White Chocolate (¼ Cup)

  • VEGAN CARAMEL:

  • Maple Syrup (¼ Cup)

  • Peanut Butter or Sunflower Seed Butter (3 Tbs)

  • Cinnamon and Nutmeg (1 Tsp)

  • Melted Coconut Oil (1 Tbs)

Instructions

Pre-heat oven to 350F.

Spread gluten free bread slices in a single layer on a parchment lined cookie sheet and sprinkle cinnamon and nutmeg on top of bread. Toast in the oven until completely golden, brown and crisp.

Let the bread cool and grind in food processor until fine and granular in texture

Grease a glass baking dish with a thin layer of vegan butter or oil.

Combine processed breadcrumbs, vegan buttery spread, and cane sugar in a small bowl and press firmly into a glass baking dish in an even layer and bake for 8 minutes.

In a medium saucepan, combine the coconut condensed milk, plant based chocolate chips and vanilla. Heat until melted and smooth, stirring constantly.

Pour the chocolate mixture over the baked breadcrumb crust and fill it from corner to corner. Swirl in fresh crushed raspberries.

Top with pretzels until fully covered. Bake until the chocolate mixture bubbles around the edges, approximately 15-20 minutes.

Cool completely, and if possible, chill in the fridge overnight.

Make Vegan caramel sauce by mixing together Maple Syrup (¼ Cup), Peanut Butter or Sunflower Seed Butter (3 Tbs), Cinnamon and Nutmeg (1 Tsp), and Melted Coconut Oil (1 Tbs)

Drizzle with vegan caramel sauce before cutting into bars.
