When I was dreaming of this recipe I thought to myself, “how much color can I pack into a dynamic dish?” Well, if you can tell, I loaded and layered this Mediterranean Dip with tons of vegan vibrancy! I used my favorite Little Northern Bakehouse sliced bread to make easy gluten-free pita chips, seasoned with Za’atar and baked to perfection. I absolutely love that Little Northern Bakehouse has gluten-free AND vegan bread so that I can enjoy all my favorite recipes without any allergies getting in my way!

  • (TOP) Pomegranate Seeds

  • Minced Fresh Herbs

  • Vegan Feta Cheese

  • Cucumber Tomato Salad

  • Chopped Black Olives

  • Cauliflower Tabouli

  • Roasted Red Bell Peppers

  • Your Favorite Hummus

  • Cooked Chickpeas

  • (BOTTOM) Vegan Tzatziki Sauce

  • Little Northern Bakehouse Bread (5-8 Slices)

  • Za’ atar Seasoning (3-4 Tbs)

  • Oil of Choice (¼ Cup)

  • Diced Cucumbers (½ Cup)

  • Diced Tomatoes (½ Cup)

  • Diced Red Onion (⅓ Cup)

  • Minced Mint (4 Tbs)

  • Minced Dill (4 Tbs)

  • Minced Parsley (4 Tbs)

  • Oil of Choice (2 Tbs)

  • Lemon Juice (2 Tbs)

  • Raw Cauliflower (1-2 Cups)

  • Chopped Celery (½ Cup)

  • Chopped Radish (¼ Cup)

  • Chopped Green Onion (¼ Cup)

  • Fresh Parsley (¼ Cup)

  • Minced Garlic (2 Tbs)

  • Mint (3 Tbs)

  • Basil (3 Tbs)

  • Vegetable Broth (1-3 Tbs)

  • Lemon Juice (2 Tbs)

  • Vegan Plain Greek Yogurt (1-2 Cups)

  • Grated Cucumber (½ Cup)

  • Vegetable Broth (1-3 Tbs)

  • Lemon Juice (1.5 Tbs)

  • Minced Fresh Dill (2 Tbs)

  • Minced Garlic (1 Tbs)

  • Salt and Pepper to Taste

Let’s Start

Set the oven to 375F to prepare for baking the Pita Chips.

Next

Make the Cauliflower Tabouli by adding all of the ingredients into a food processor. Process them together while slowly incorporating the liquid ingredients until everything is well combined and mixed together. Strain the cauliflower to remove any excess liquid and save that liquid for a quick and easy salad dressing! Set a Cauliflower Tabouli aside in the fridge.

Next

Make the Cucumber Tomato Salad by mixing together all of the ingredients until everything is covered and well combined and covered in seasoning. Set aside in the fridge.

Make the Vegan Tzatziki Sauce by mixing together all of the ingredients in a medium bowl. Add more vegetable broth if necessary for your desired creaminess. Set aside in the fridge.

Make the pita chips by slicing the bread into triangles. Add the sliced bread into a large bowl and drizzle oil all over them. Pour the Za’atar seasoning all over the sliced bread and mix everything together well until the bread is covered in seasoning.

Put the seasoned bread triangles on a covered baking sheet and space them out so they are not touching. Bake the bread for 8-15 minutes or until crispy. Remove them from the oven once they are crispy and ready.

Layer the Mediterranean dip starting at the bottom with Vegan Tzatziki, then Cooked Chickpeas, Hummus, Roasted Red Bell Peppers, Cauliflower Tabouli, Chopped Black Olives, Cucumber Tomato Salad, Vegan Feta Cheese, and top with Minced Fresh Herbs, and Pomegranate Seeds.
