  • EatPlantBoss Crumbles (1-2 Cups)

  • Shaved Purple Cabbage (¼ Cup)

  • Diced Pineapple (¼ Cup)

  • Diced Bell Peppers (⅓ Cup)

  • Green Onions (¼ Cup)

  • Lime Wedges (1 Lime)

  • Green Onions (5-6 Stems)

  • Scotch Bonnet Pepper (1 Whole)

  • Fresh Thyme (6-10 Stems)

  • Lime Juice (2 Tbs)

  • Grapeseed Oil or Vegetable Broth (¼-½ Cup)

  • Fresh Ginger (1 Tbs)

  • Garlic (5 Cloves)

  • Allspice (⅓ Tsp)

  • Nutmeg (⅓ Tsp)

  • Cinnamon⅓ ( Tsp

  • Liquid Aminos (2 Tbs)

  • Salt and Pepper to taste

  • Maple Syrup (2 Tbs)

  • Vegan Mayonnaise (¼-½ Cup)

  • Coconut Milk (1.5 Cup)

  • Plant-Based Cheddar Cheese (1 Cup)

  • Lime Juice (1.5 Tbs)

  • Salt and Pepper to Taste

Instructions

Let’s Start

To make a Jamaican jerk sauce: a blender combine green onions, scotch bonnet pepper, fresh thyme, lime juice, grapeseed oil, fresh ginger, garlic, allspice, nutmeg, cinnamon, liquid aminos, maple syrup, salt and pepper to taste. Blend everything together until smooth and creamy and add additional oil if needed.

Next

In a medium bowl mixed together plant-based mayonnaise or hummus with some Jamaican jerk sauce to make a creamy jerk sauce. Set aside.

In a large bowl soak the Plant Boss meatless crumbles in water for 3 minutes and then strain.

In a large pan heat 1 cup of the Jamaican jerk sauce until it is hot and then add 1 Cup of rehydrated Plant Boss meatless crumbles to the pan. Cover and coat the meatless crumbles in Jamaican jerk sauce and add more sauce if needed.

In a medium pot, heat coconut milk and then stir in plant-based cheddar cheese. Whisk everything together until smooth and creamy and add more coconut milk if needed. Add in a squeeze of lime juice, and sultan pepper if needed, and set aside the queso on low heat until you are ready to serve.

Build the nachos on your serving plate with plantain chips, then the jerk seasoned plant boss meatless crumbles, queso cheese, fresh cabbage, chopped pineapple, diced bell peppers, creamy jerk sauce, and green onions. Serve with fresh lime wedges on the side.
